- Add the wet ingredients (cashew butter, maple syrup and vanilla extract) to a bowl and whisk until smooth. Set aside.
- In a separate large bowl combine the dry ingredients (Buddha’s awakening chocolate hit, salt, freeze-dried strawberries).
- Add the wet mix to the dry ingredients and mix using a spatula. Once the mixture comes together start kneading it with your hand to form a dough.
- Cover the dough with plastic and refrigerate for half and hour.
- Line a baking sheet with parchment paper and use and ice-cream scoop to measure out the cookies.
- Flatten each cookie with the back of a spoon before creating a criss-cross pattern on each cookie using a fork.
- Place the cookies in the freezer to set for one hour.
- Melt some dark vegan chocolate and dip each cookie in the chocolate covering half of the surface (or the full surface if you prefer!). Sit them on the baking tray lined with parchment paper.
- Dust the cookies with some freeze-dried strawberries before the chocolate sets.
These cookies store well in an airtight container in your refrigerator or freezer.
