1. Preheat your oven to 170°C.
2. Chop the apples into 1 inch cubes and add them to a bowl.
3. In a separate small bowl mix the cornflour and water together. Add the coconut sugar, vanilla bean paste and cinnamon and mix.
4. Add the coconut sugar mixture to the bowl with the chopped apples, toss to coat them evenly and set aside.
5. For the crumble/crust, add the GF oats, maca powder, cinnamon, nutmeg and sea salt to your food processor and blitz for a few minutes until the mixture has a floury consistency.
6. Add the coconut oil and maple syrup and continue to blend until the mixture begins to stick together to form a dough, Lastly add the water, one tablespoon at a time, blending in between until you have a dough consistency.
7. Line an 8 x 8” pan with parchment paper and add 2/3 of the crust mixture to the base of the pan, pressing down firmly to compact it.
8. Add the apple mixture on top of the base and crumble the remaining crust mixture on top.
9. Bake for 35-40 minutes until slightly golden on top.
10. Once cooled, cut into bars and serve.
